First thing first – why would someone want to eat flat bacon?! Well, many bacon lovers like to cook with flat bacon, cutting it into perfect bacon squares. Others do it purely for presentation, believing that wrinkle-free bacon at the center of a plate is a thing of beauty (we happen to agree).


So, how can you do it?


It all starts by putting away the skillet. Not long ago we showed you how to cook bacon in the oven, and that’s where you should start. But even in the oven you will get a little wrinkle. Here’s the trick: lay a wire rack (the kind you would cool hot-out-of-the-oven cookies on) across foil-lined tray, then lay out your bacon on top of the rack. By keeping your bacon off the tray, you are able to let air circulate around the bacon, helping it cook evenly. Then place another wire rack on top of the bacon to keep it flat.


It’s a pretty simple process that takes you one step closer to being a baconnoiseur.
